Instructions
  1. Wash and cut your Zucchinis and put them in a pot of cold water (do not remove ends).
  2. Bring to a boil and cook until tender, about 10-15 minutes, maybe a little longer depending on the size of your zucchini. Make sure not to overcook them.
  3. Heat up a dash of olive oil in a hot pan, caramelise the chopped onion then add the tomato, diced pepper, mushrooms, garlic and fry for about 5 min. Add the Oregano stir and remove from the heat. And set aside
  4. Preheat the oven to 185°C. In a pan heat up some oil and add the mince spice with salt and pepper. Fry until half-cooked then add the tomato mix to the mince. Cook for another 5 min.
  5. Once your zucchinis have cooked through drain the water and let them cool until you can handle them. Cut the tops off and cut in half. Scoop some out of the middle with a spoon until you have a little Zucchini Boat.
  6. Place your Zucchinis in a baking tray then fill them with your mice mixture. Bake them for 15 min, remove and top with crumbled feta and then some cheese and bake for another 15 min or until the cheese is melted and starts turning golden.
