Instructions
  1. Saute your onions in some oil and salt on a low heat. Add all the dry herbs and spices stir around for 2-3 min. then add everything else except for your gherkins and eggs. Boil your eggs on the side for 7+ min while you continue with the mixture.
  2. Bring the mixture to a boil and let it simmer for 3min. Taste the mix, if it's not sweet and you want sweet add some sweetener. Turn the stove off and leave the mixture while you continue with the eggs.
  3. Peel and wash your eggs, do not refrigerate them as you need them to be warm to room temperature when you put them in the jar. Make sure there are no traces of shell. Rinse your jar with warm and then hot water. Layer the eggs, pickles and scoops of onion out of the vinegar pickle.
  4. Pour the hot vinegar mix over the eggs until they are submerged or very little is sticking out. Now let the mixture cool down to room temperature and refrigerate immediately. Keep in the fridge until serving time. Serve and put remainder back in the fridge
Recipe Notes

For this Recipe you will need a glass jar with a lid, like a mason jar. It should be big enough to hold your eggs, gherkins and pickle mix.

This recipe is good for 7 - 10 day refrigerated.
